The catfish will produce a hairball make sure that you destroy it before it hits the boat. The colour glitch happens while attacking the catfish but with the barbarian is a little random. When your weapon is back behind the catfish he may die before the cannon fires. This will cause the catfish to hit as it is sinking this will cause the game to have a colour glitch. The only to not have this weird glitch not happened is not to let the cannon fire before the catfish dies. If you are effect by this color glitch got to you Xbox 360 dashboard right after you hear the world music. You will still have you XP points you have gained from the catfish.
